A huge STRAW BALE building was completed ’99/2000 and functions as the winery, the insulation qualities of the straw are very good. The building is also used for wine tastings and dinners. The views over the vineyard are magnificent.
Grapes are hand picked, crushed and destemmed. The reds are open vat fermented and the cap manually plunged, and the whites are fermented either in oak or stainless steel. A basket press is used when ferment is complete and the wine is transferred to a variety of French, and American oak to mature. By careful handling and attention to detail our wines need minimal chemical intervention in their making
